【瑞士雞翼 Swiss Chicken Wings】
材料:
雞全翼6隻
蒜頭3瓣
薑4片
洋蔥1/2個
乾蔥頭1粒
桂皮1條
花椒少許
芫茜1棵
八角2粒
香葉2片
蔥3條
老抽250毫升
生抽150毫升
水700毫升
冰糖50克
紹酒3湯匙

步驟:
1)薑切片;洋蔥切大片;乾蔥頭切半。
2)雞翼用薑片汆水,取出降溫。
3)熱鑊熱油爆香花椒、八角、桂皮及香葉,炒至有香味。
4)再下薑片、洋蔥、蒜頭、乾蔥頭、蔥及芫茜爆香。
5)加入水、老抽、生抽及冰糖。
6)瑞士汁煮滾後,放入雞全翼大火煮 5 分鐘。
7)放入真空煲 1 小時即成。

【紅豆沙】
材料:
紅豆250克
陳皮1塊
百合 1/2個
蓮子8-10粒
冰糖 適量
水1300 毫升

步驟:
1)紅豆、蓮子洗淨,用清水浸泡至少 4 個小時或以上。
2)陳皮浸軟刮囊,百合洗淨。
3)紅豆、蓮子、陳皮、百合放入內鍋,加水,並大火加熱至滾起。
4)紅豆熬煮變軟,可用勺壓一壓,做出稠厚質感。
5)加入冰糖。
6)放入真空煲 2 小時即可。
【Swiss Chicken Wings】
Ingredients:
Whole chicken wings 6pcs
Cloves of garlic 3pcs
Ginger 4 slices
Onion 1/2
Dry onion1pcs
Cinnamon stick 1pcs
Sichuan Peppercorn a little
Coriander 1pcs
Star anise 2pcs
Bay leaves 2pcs
Green onions 3pcs
Dark soy sauce 250ml
Light soy sauce 150ml
Water 700ml
Rock sugar 50g
Shaoxing wine 3
tablespoons

Steps:
1) Slice ginger, cut onion into large pieces and cut dry onion into half.
2) Boil the chicken wings with ginger slices. Then, take them out to cool down.
3) Heat oil in the inner pot. Then, saute sichuan peppercorn, star anise, cinnamon stick and bay leaves.
4) Add ginger slices, onions, garlic, dried shallots, scallions and coriander and saute until fragrant.
5) Add water, dark soy sauce, light soy sauce and rock sugar.
6) After the Swiss sauce boiled, add the chicken wings and cook over high heat for 5 minutes.
7) Place in Shuttle Chef for 1 hour and enjoy!

【Sweet Red Bean Soup】
Ingredients:
Dried Red Beans 250g
Aged Orange Peel 1pc
Dried Lily 1/2pcs
Lotus seeds 8-10pcs
Rock sugar appropriate
Water 2.8L

Steps:
1) Wash red beans and lotus seeds. Then, soak them in water for at least 4 hours.
2) Soak the aged orange peel and scrape the capsule. Then, wash the dried lily.
3) Put red beans, lotus seeds, aged orange peel, and dried lily into the inner pot. Then, add water and heat over high heat until it boils.
4) When the red beans are boiled and softened, press them with a spoon to create a thick texture.
5) Add rock sugar.
6) Place in Shuttle Chef for 2 hours. DONE!
